(Jou Ma Se) Banana Bread
If you don’t understand Afrikaans (a language from South Africa where I live), the title in English is Your Mother’s Banana Bread, though it is actually an old recipe from my mother. Anyways, this is an excellent recipe that I make regularly and tastes really good. Note, I have adapted this recipe to use less bowls & reduce cleaning time, in the original recipe bananas are mashed in 1 bowl, dry ingredients sieved in another bowl & eggs whisked in the 3rd bowl. I don’t notice any difference using my method.
Ingredients
Preheat oven to 180°C / 356°F
- 125ml (½ Cup) Butter or Hard Margarine (Softened/Room Temperature)
- 250ml (1 Cup) Sugar
- 5ml (1 Teaspoon) Vanilla Essence
- 2 Eggs
- 500ml (2 Cups) Cake Flour
- 10ml (2 Teaspoons) Baking Powder
- 2.5ml (½ Teaspon) Salt
- 3-5 Ripe Bananas (dependant on size, more bananas = more flavour)

Method
Ovens vary so be sure to monitor for burning
- Unpeel, chop & mash bananas into a paste in a large bowl
- Add butter & sugar to bananas & mix well
- Add vanilla essence & eggs & mix well
- Sieve flour into bowl, add salt & baking powder & mix well
- Grease/Spray a bread tin & fill tin with mixture
- Bake at 180°C / 356°F for 55-60 minutes
I use an air fryer oven and when baking I set it at 180°C for 50 minutes as it seems to bake faster in the air fryer than a regular oven.
